Browned Butter Honey Spread

Browned butter you can keep on standby. Dangerous, but in a good way.


Ingredients

  • 1 cup / 2 sticks unsalted butter

  • 1 tbsp honey or maple syrup

  • Flaky salt, to taste

  • Zest of 1 lemon, lime, or orange, optional


Instructions

  1. Brown the butter in a pan over medium heat until it smells nutty and the milk solids turn golden-brown, about 5–6 minutes. Don't walk away; it goes from "nutty" to "regret" fast.

  2. Let it cool slightly, then whisk in the honey and salt.

  3. Pour into a jar or roll into a log in plastic wrap. Refrigerate.


Where it goes: melted over steak, stirred into oatmeal, spread on toast, tossed with roasted squash, or eaten off a spoon at 11pm — no judgment.
