Caraway Roasted Potatoes

Crispy potatoes with a little “wait, what’s in these?” energy.
Ingredients
1½ lbs baby potatoes, halved
2 tbsp olive oil
1 tsp caraway seeds, lightly crushed
Salt + black pepper
1 tsp Dijon mustard
Fresh dill, rosemary or parsley
Squeeze of lemon
Directions:
Toss the potatoes with olive oil, caraway, salt, and pepper.
Roast at 425°F until browned and crisp, about 30–35 minutes.
While they’re hot, toss with the Dijon, fresh herbs, and a squeeze of lemon.
Where they go: alongside chicken, sausage, salmon, roast pork, or directly from the baking sheet while dinner is supposedly still being assembled.
Bonus: Cabbage has been the wallflower at every dinner party since 1952. Add butter, apples, and caraway, and suddenly it's the one telling stories at the bar.
