Mood pairing: Fancy enough for a dinner party, easy enough for a Tuesday.

Ingredients

  • 2 salmon fillets

  • 1 tbsp coriander seeds, cracked (not fully ground — texture is the point)

  • ½ tsp cumin

  • Salt + pepper

  • 1 tbsp olive oil

Yogurt:

  • ½ cup Greek yogurt

  • Zest + juice of ½ lemon

  • Handful chopped herbs (cilantro or parsley)

  • Salt

Directions

  1. Press the cracked coriander onto the salmon like you're giving it a spice tattoo.

  2. Sear skin-side down in olive oil, 4–5 minutes, flip, finish 2–3 more.

  3. Dollop with citrus-herb yogurt.

Suddenly you're a person who "just whips things up."
