Mustard-Seed Vinaigrette

This is the gateway mustard move. It shows what mustard actually does: sharpens, balances, holds things together, and makes “I should eat more vegetables” feel less like a memo from your responsible self.


Ingredients

  • 1 teaspoon mustard seeds, lightly crushed

  • 1 tablespoon Dijon

  • 2 tablespoons vinegar or lemon juice

  • 5 tablespoons olive oil

  • 1 teaspoon honey

  • Salt and pepper


Instructions

  1. Whisk everything together.

  2. Taste and adjust.

  3. Adjust Too sharp? More oil or a touch more honey. Too flat? More acid or salt.


Where it goes: salads, roasted vegetables, grain bowls, chicken, salmon — or anything currently describing itself as “healthy” while tasting deeply disappointed about it.
